Spiralized Beets: 5 ' 15

Dinner tonight was grilled salmon, with a side of  spiralized roasted beets, and baby kale (from our garden), in a homemmade artichoke pesto sauce.  We can't make up our minds which was more fun, cooking it, or eating it..
