Lunch: Korean Vegetable Beef Soup with Rice Cakes 6 ' 16


'Tteokguk' is a traditional Korean rice cake soup that is often served at New Years. The dish can be made very simple, with very few store bought ingredients, or complex with lots of  extra ingredients.  I chose the latter.  What made this soup so special was the  rich vegetable broth is made from scratch and seasoned with a Korean Garlic Soy paste. It required a bit more preparation time than I would normally allocate for lunch, but the flavor was so worth it.  The recipe for this dish is definitely a keeper.
